I received this recipe for the easiest protein pancakes from an amazon .ca reviewer (thanks samwise) and decided it seemed so simple I had to try it. With only 3 ingredients I didn’t think they would taste like much, but I was wrong.
The key to baking with protein powder is to start with a protein powder that tastes great, so since I am using our Boomer Nutrition ENERGY Vanilla Protein Powder, I guess I shouldn’t be too surprised that they tasted so good!
The recipe starts with 2 eggs; right there you are getting 12 grams of complete protein and B vitamins, not to mention omega 3s if you buy omega eggs. Add in a scoop of Boomer Nutrition Protein Powder and you get 20 more grams of protein with the added benefit of B Vitamins for energy and added leucine for muscle recovery and preservation, an important part of slowing age-related muscle loss. The 3rd ingredient – a simple banana – gives you a serving of fruit, a dose of potassium and a dash of natural sweetener.
The recipe is so simple you won’t believe how great they taste. I am betting you will soon be making these every weekend in place of those boxed pancakes.
Our favourite weekend breakfast is these Whole Wheat Banana Protein Waffles but they do take a bit more time due to whipping the egg whites – however, if you are feeding a crowd or have the time, these waffles are the best!!

Beat eggs, mash banana and stir in a scoop of Boomer Nutrition ENERGY Vanilla Protein Powder,and that is it. Cook on your stove top as you would any other pancakes. Makes 3-5 pancakes and serves up a whopping 30 grams of protein.

Add 1/3cup of rolled oats and a dash of cinnamon to add fiber and even more protein.
Add blueberries, strawberries, mangos to the batter or as a topping to get a second serving of fruit.
