Eating a healthy protein packed breakfast is easier if you have something quick to grab on the way out the door and what better grab and go than a cookie! The secret to a healthy breakfast cookie is including fiber, protein and fruit while leaving out the refined flour or sugar. Add a glass of milk or pure orange juice and breakfast is complete.

Taking care of your health is important as you age and ensuring you get enough daily protein is key. These protein packed breakfast cookies are great for busy morning or as a mid day snack after you’ve had more morning protein smoothie!

This recipe is sure to please. Its easy, full of whole grains, flax, chia, protein powder and uses up those bananas you have stored in the freezer.

Easy Protein Packed Breakfast Cookies

Makes approx 20 cookies.

2 cups rolled oats

1/4 cup ground flax

2 tbsp chia seeds

2 tbsp hemp seeds

1/2 cup (1.5 scoops) Boomer Nutrition ENERGY Protein Powder – Chocolate or Vanilla

1 tsp baking soda

1/2 tsp salt

2 tsp vanilla extract

4 tbsp extra virgin olive oil or melted coconut oil

1/4 cup maple syrup

2 mashed fresh or thawed frozen bananas

Handful – or two – chocolate chips

 

Directions

Preheat oven to 350 degrees. Place first 6 (dry) ingredients in a food processor and pulse until rolled oats are desired consistency or even flour like. Transfer to a bowl and add in wet ingredients – maple syrup, banana, vanilla, and oil. Mix well. Add chocolate chips and stir.

Using a large spoon, place mounds of dough on parchment covered cookie sheet, leaving space as cookies may spread. Flatten mounds with a flour coated fork if you prefer flat cookies.

Bake for 9 minutes. Remove from oven and let cool. For soft cookies store in plastic container, for crispy store in glass. Makes 20 regular size cookies but feel free to make them larger if they will be the star of your breakfast on the go.
