Replacing white flour with rolled oats transforms plain pancakes into fiber filled breakfast fuel. These Protein Packed Oatmeal Pancakes are a great example of how easy it is to bake with a scoop of chocolate or vanilla protein powder – it adds 20 grams of protein to the batch and makes these pancakes a complete meal.

Made with rolled oats, oat bran, flax, an egg, 2 cups of milk, some oil and a scoop of Boomer Nutrition ENERGY Chocolate or Vanilla Protein Powder, puts the protein in these pancakes off the charts. Protein Packed Oatmeal Pancakes

1½ cups rolled oats
2 cups milk
½ cup oat bran *can use whole wheat flour instead
1 scoop Boomer Nutrition ENERGY Whey or Organic Vegan Protein Powder – Chocolate or Vanilla
¼ cup any combination of hemp seeds, bran, wheat germ, flax or chia seeds
1 tbsp maple syrup or honey
½ tsp salt
1 tsp cinnamon
1 tbsp baking powder
1 egg, beaten
¼ cup extra virgin olive oil or coconut oil
2 mashed bananas
Chocolate chips if desired

Makes approx 14 pancakes

The flax,chia and hemp add more protein, omega 3s etc. but are not required for great tasting oatmeal pancakes! Same for oat bran – replace with more oats if you don’t have oat bran on hand. 

Directions

Mix oats and milk and let sit for at least 10 minutes to soften oats. In a separate bowl or large measuring cup mix oat bran/flour, flax, hemp, chia, salt, cinnamon and baking powder then add to oatmeal mixture. Add egg, oil, maple syrup and chocolate chips and mix well.

Spoon onto heated griddle. These are very filling pancakes, so make smaller than regular pancakes. They will not ‘bubble’ and rise as the boxed mixes do since the oats make these a much denser pancake. Flip pancakes when one side is brown and is heated thru.

Top with maple syrup, fresh berries and Enjoy.
