With 3 grams of protein per cookie, lots of fibre from oats, seed butter, and hemp, and sweetened naturally with honey and medjool dates, these cookies are nutritious as well as great tasting.

Imagine whipping together a batch of ridiculously healthy cookies in under 15 minutes without turning on the oven or getting a single mixing bowl dirty. Imagine they could be made without peanut butter and still hold together, made without refined sugar and still taste sweet.

These no bake, nut free triple chocolate protein cookies are great for a breakfast cookie on the go, a snack for school or office lunches, to restore energy after a workout, or as an evening treat.  Made in a food processor and pressed by hand into 20 cookies, they require no baking or refrigeration before enjoying and they can be stored in the freezer if you are making a larger batch.

No Bake, Nut Free Triple Chocolate Protein Cookies
Makes approx 20 cookies

1 cup rolled oats

1/2 cup seed butter (can use nut butter if nut free not required)*

1 scoop Boomer Nutrition ENERGY or Organic Vegan Protein Powder – Chocolate

1/2 cup chocolate chips

1/4 cup honey

4 medjool dates pitted

3 tbsp hemp seeds

1 tbsp cocoa powder

Directions
Add all ingredients into a food processor. Blend until thoroughly mixed. Might need to shift the ingredients a few times and blend further to be sure everything is combined properly.

Dump blended contents onto counter and shape into balls.  They can be enjoyed as a protein ball or flatten between your palms for easy on the go protein cookies.

*I used an organic seed butter made up of roasted sunflower seeds, sesame seeds and flax.  Any nut or seed butter will work and give the cookies a unique taste.  Experiment to find your favourite.
