Breakfast is the most important meal of the day so start your day off right with these Whole Wheat Banana Protein Waffles. Traditional toaster waffles have little more than flour, water and eggs and are not much of a nutrition superstar, but after our breakfast makeover, these waffles are over flowing with whole wheat, fiber and most important, protein.
Not only do they have 26 grams of protein from the 2 cups of whole wheat flour and another 24 grams from the 4 eggs, but we’ve added a scoop of protein powder to increase the protein in one batch of waffles by another 25 grams. That is a lot of muscle building, cell repairing, essential amino acid providing protein from breakfast waffles!
Baking with protein powder can add great flavour as well as added essential nutrients so go ahead and try adding a scoop to homemade pancakes or even cookies.
Invest in a waffle maker and enjoy these homemade protein waffles topped with fresh berries, a scoop of vanilla greek yogurt and a drizzle of real maple syrup for a complete breakfast.
Whole Wheat Banana Protein Waffles
2 cups whole wheat flour
1 scoop chocolate or vanilla Boomer Nutrition Protein Powder
6 tsp baking powder
2 tbsp sugar
½ tsp salt
2 cups milk
8 tbsp oil (evoo, coconut or another favorite)
1 tbsp vanilla extract
4 eggs separated
2 bananas mashed – fresh or frozen
Mix first 5 dry ingredients & set aside. Mix milk, vanilla, oil and egg yolks together.
Add to dry.
Add bananas & chocolate chips.
Beat egg whites with a fork until fluffy and can almost form peaks, fold into flour mixture and pour by the scoopfuls into hot greased waffle maker. Makes 16 waffles.
Serve with sliced fruit and maple syrup.
Freeze leftovers to pop in toaster for a healthy snack or on the go breakfast.
